Spinach Stuffed Chicken Breast
Truly delicious spinach, onion and feta stuffed chicken breasts.
1 small chopped onion
1 cup spinach
1 tsp lemon peel
1/4 cup crumbled feta cheese
1 tsp salt
1 tsp black pepper
8 oz boneless skinless chicken breast
1 tsp extra virgin olive oil
In a large non-stick skillet, heat olive oil; sauté onion until golden, 5 minutes.
Wilt spinach (steam or heat damp in pan); stir in lemon zest, feta, salt and pepper. Set aside.
Divide spinach mixture between chicken breast cutlets.
Roll up and secure with toothpicks.
In same skillet, heat remaining oil over medium-high heat.
Cook chicken, turning occasionally until golden brown and cooked through, about 10 minutes.

This is so yummy. Forgot to add that it is best to ound the chicken flat first.

Delicious and nutritious!!! 5 Stars! Are we sure about the calorie count though? 4 oz of chicken alone has 200 calories. Either way...will definetely make again!

Delicious! Part of my family thought it would be better w/out lemon, and part thought it needed a bit of a kick. Overall, great!

made this tonight and we all loved it, it was like something you order in a restaurant. Mine came out a little dry but very tasty!
