Homemade Black Bean Soup

Quick and easy black bean soup the family will love.

Ingredients

Directions

  1. Puree 15 oz of black beans with one tomato, queso cheese, bay leaf and 1/2 cup of water. Set aside.
  2. In a pot, melt margarine adding in onion, green peppers, garlic and one tomato.
  3. After the onions have caramelized and green peppers have started to tender, add in kielbasa, oregano, and cumin.
  4. After kielbasa is cooked, stir in pureed beans and green onion.
  5. Bring mixture to a simmer and add remaining black beans and water.
