Gouda Stuffed Chicken Wrapped in Bacon

This recipe can be a bit on the spicy side, but you can always use less spices for each serving.

Directions

  1. Pre-heat oven to 350° F (175° C).
  2. Flatten chicken breasts to 1/4 inch thickness. Combine pepper, garlic powder, paprika and the cayenne together in a small bowl and spread evenly on both sides of the chicken breasts. (This can be rather spicy, if in doubt, use about half of the spice mixture.) Salt to taste.
  3. Cut the gouda cheese into small peices and place 1 oz of cheese on each chicken breast. Press down firmly and roll the chicken from the narrow end. Wrap each roll in a slice of bacon and secure with a toothpick.
  4. Melt the butter in a skillet over medium heat. Brown chicken rolls evenly until the bacon starts to get crisp.
  5. Place the chicken rolls into a baking dish and bake at 350° F (175° C) for 20 minutes. Remove toothpicks prior to serving.

made this tonight and we LOVED it! Next time may try different type cheese and add chopped broccoli

Excellent. I modified a little... I used normal bacon and wrapped one piece vertically and a second piece horizontal. (helps hold the cheese in) I purchased Perdue thin slices.... ready to roll! I did use half of the spice mixture but next time I may use all of it! IN all.. this was great.. my neighbor who dined with us asked for the recipe.

This recipe is FANTASTIC! Everyone came in the house, and looked in the oven! I used 2 pieces of bacon. I crossed them, so they shaped the chicken in a box, with the bacon as "ribbon". It helps hold the stuffing in, and is great for presentation! I did not put the spices on the outside of chicken. I only rubbed it on the inside, and it kept ALL of it's flavor! It took my chicken about 24 minutes to cook. I used regular gouda and extra cayenne. WONDERFUL recipe, will make the Atkins diet easier for Induction!

My husband and I loved this recipe. Thanks for posting it. I ran out of bacon so I added smoked ham wrapped in with the gouda. It worked great.
