A hearty and very nutritious stew that's full of goodness.
Ingredients
Directions
- Remove skin from chicken, along with any extra fat.
- In large skillet, combine chicken, water, garlic, onion, salt, pepper, tomatoes and parsley.
- Tightly cover and cook over low heat for 25 minutes.
- Add celery, potatoes, carrots, and bay leaves and continue to cook for 15 more minutes or until chicken and vegetables are tender.
- Remove bay leaves before serving.

This was one of the best recipes,yet for the "You" diet. It was favorful and I was full after my single serving. Easy to make and delicious to eat, healthy too!!

I think this would be good if the potatoes were replaced by cauliflower and I'm going to leave out the carrots. Good recipe though!
