Chicken Salsa Soup

Chicken breast with salsa and veggies make a highly appetizing soup.



  1. In a large saucepan, combine chicken, broth, water and chili powder.
  2. Bring to a boil. Reduce heat; cover and simmer for 5 minutes.
  3. Add corn and carrots and return to a boil.
  4. Reduce heat and cover and simmer till chicken is no longer pink and corn is tender
  5. Add salsa and heat through. Garnish with cheese if desired.

Easy to make and modify to taste :) I used spicy V8 in addition to the chicken broth for a little extra kick and veggie-goodness.

Superb. I refigured the nutrition but it is quite close, if each serving is a cup. Next time I will use a low sodium broth as mine had very high sodium. The spice was perfect. I will definitely make again. Thank you khoyt. We had this tonight and my husband and I ate 2 cups each!!!
