Ingredients
Directions
- In a large saucepan, combine chicken, broth, water and chili powder.
- Bring to a boil. Reduce heat; cover and simmer for 5 minutes.
- Add corn and carrots and return to a boil.
- Reduce heat and cover and simmer till chicken is no longer pink and corn is tender
- Add salsa and heat through. Garnish with cheese if desired.

Easy to make and modify to taste :) I used spicy V8 in addition to the chicken broth for a little extra kick and veggie-goodness.

Superb. I refigured the nutrition but it is quite close, if each serving is a cup. Next time I will use a low sodium broth as mine had very high sodium. The spice was perfect. I will definitely make again. Thank you khoyt. We had this tonight and my husband and I ate 2 cups each!!!
