HELP!!! Newly Diagnosed Celiac Disease
If you're looking for a great cookbook that with no gluten, it's hard to do better than "Cooking for Isaiah" by Silvana Nordone. It's got everything from pancakes to crab cakes. I spent four years as a live-in nanny for two boys with celiac (and who were also allergic to milk and soy) and they couldn't get enough of the muffins I'd make from the recipes in this book! It's probably the best gluten-free cookbook I've ever used.

As for good-tasting, gluten-free bread it really is best to invest in a bread machine and make your own. It sounds intimidating, but it's actually very simple and completely worth it for the taste. "Gluten-Free Baking for the Bread Machine" by Annalise Roberts is a great resource for fabulous, easy bread.

Labels can lie...
Too true. This is more or less the lesson I walked away with after my four year stint as a live-in nanny for two boys with celiac, dariy and soy allergies. You'd be amazed at what hides in packaging under different aliases and "creative" ways of determining percentages. It really is just smarter (and in some cases, safer!) to get your calories from as much whole and unprocessed food as possible.

Birthday cake low carb, tasty?
I'm sorry I only found this post now, since it's probably too late, but just in case someone else stumbles in here with a similar problem I want to say that there's no need to worry. I used to do a lot of gluten, soy and dairy free baking back when I was a nanny (my boys had food allergies). Don't despair and don't let your friends convince you that gluten-free means taste-free, because it's not true. There are plenty of fantastic recipes out there!

As a general rule, the key to good gluten-free baking is the flour mix. Find a good one that works for you and everything else is easy. It's also very common in a lot of recipes to swap veggie purees or starchy fruits for binders like egg, and rice or hemp milk have fewer calories than cows milk with absolutely no noticeable difference.

Cooking for Isaiah by Silvana Nordone is one of the best gluten-free cookbooks out there. Every single thing I've made out of it has been a hit. Your friends won't even know the difference! If baking from scratch sounds like too much work, Bob's Red Mill sells a lot of pre-made, gluten-free mixes that are pretty tasty, too.

Veggies For Breakfast
I don't usually go for a salad, but I do eat a lot of green smoothies for breakfast. I blend up spinach, lettuce mix and a mix of fruit in bulk whenever I have the time and freeze it. Then all I have to in the morning is thaw out a container and go. Along side a glass of milk (almond, hemp or whatever your fancy) and a piece of fruit, it's plenty enough to keep me satisfied until lunch time.
