I quit smoking last year and gained nearly 30 pounds. Now, I'm trying to lose those extra pounds. On top of that, I love to cook, and I'm under 5-feet tall -- plus, I'm shrinking. When not dieting I enjoy cooking and sewing and being around my ornery cat, although he doesn't think he's ornery at all.

Too much protein??
I'm making a pot of bean soup for supper tonight, but I doubt I'll do that again. Have you seen how many calories are in one cup of beans? Ouch. Lentils are just a bad. I enjoy eating both, but it's too difficult to eat them and come in within my daily calorie allowance.

Frustrated, but never hungry
I use cauliflower pizza crust to make pizzas. I think it would work for Atkins, but I'm not sure. It's made with one cup shredded cauliflower, one cup mozzarella cheese, and one egg. You also toss in some herbs like fennel and parsley. I use tomato paste on top and cooked ground beef. It tastes great. Can google web for complete recipe if you like the sound of this.

Miracle Noodles
Hi, if you do a web search for Miracle Noodles, you'll find their site. They sell them online. It looks as though they're made of mushrooms. They're rather pricy. That figures. They're probably made from dried mushrooms. Just think how many dried mushrooms it would take to mill enough flour from them to make a batch of noodles. Anyway, I do something nearly as good. I use zucchini cut into 1/4 inch strips which I boil for 1 minute and then drain. Very low cal, no carb, and not at all expensive.
