soooo birds eye makes a buffalo cauliflower and I ate the whole bag (5 net carbs). very filling and I had a coupon. Got me thinking..i have the urge to have a all veggie day.. like a vegetarian day..Any one ever try this ? Would it help or hurt? I mean whats the harm right? Would eggs and cheese still make it a vegetarian day? Just trying to spice it up and its warming up here (73 today) so produce prices should be going down.. Send me your input, thoughts and opinions, and recipe ideas if you have any ?

Portobello's have a unique almost dare I say 'Steak' like taste....favorite is a Portobello burger, or definitely stack with an egg!

last I heard eggs and cheese weren't veggies... you said an all veggie day. That being said, vegetarians go around eating meat and still call themselves vegetarians so my assumption is it's some kind of get out of jail free and still holier than thou card...aka hypocrites. Now vegans, that's a whole nother story! At least they stay true to their word...for the most part... I have seen some wearing animal products... o.O

That being said, vegetarians can do atkins, as can vegans, so go for it. As for your comment Mahjohn, I respectfully disagree. No portabella has EVER tasted like steak. It's slimier but still dry, weird texture... nothing like a steak...no matter how much you try to fake it, there is NO substitute for steak!

I am going to look real hard for that buffalo cauliflower. I don't think I have ever seen it in the frozen foods at Wal-Mart. It sounds like something I would enjoy.

I'm a vegetarian on Atkins, my food diary is at bit bizarre but it works fine for me!

Another idea for portabellas - get the large caps, several inches across. Clean out the ribs on the underside. Brush well with olive oil, sprinkle with salt, pepper, and whatever seasonings you want. Bake them in a 350 degree oven for about 12 minutes. While baking saute onion, garlic, red peppers, and any chopped mushroom stems you may have removed in olive oil and butter. Add fresh spinach or kale and cook till it wilts. Salt/pepper as desired, can also add basil, etc. Remove the mushrooms from the oven, drain any liquid, add the sauteed veggies, top with crumbled feta and shredded parmesan cheese. Bake another 10 minutes or so. It's delicious.

There are plenty of vegetarian and vegan options for low-carb or modest-carb eating. If you want protein sources, there are eggs, dairy, nuts, tempeh, and tofu. Some veggies, like broccoli, kale, and spinach have some protein. Beans are protein-rich and full of fiber, but also have starch. Soybeans, lentils, and chickpeas are a bit lower in starch than other beans. You can search Amazon or your local library for low-carb vegetarian cookbooks for recipe ideas.

GREAT IDEAS... gonna get some fresh portabellas.. Has any one ever "grilled" greens like cabbage or I was thinking roasted brussel sprouts.

Grilled cabbage is great! It's about the only way I'll eat it cooked. IMO grilling almost any veggie brings out the natural sweetness.

love portobellas too! one of my go-to's is the get the big ones, clean out stem & gills and grill/cook to remove a lot of the moisture. then line the inside with basil leaf then a wedge of laughing cow on top (lots of different flavors available). put under the broiler for a few minutes. yum!! if you're eating meat, add whatever meat (i like canadian bacon) under the cheese. double yum!!

I saute shredded cauliflower, mushrooms and onion and it is to die for! It's called 'Cauli-Rice' in Paleo cookbooks and I swear by it.

Cauli-Rice is great....i cut off the stems, chuck the heads in a blender, chop em' up until they are like rice grains...spread em flat on a baking tray in the over to help dry them out a bit, then fry them in Coconut Oil or Butter

Vegetarians eat honey, eggs/caviar & dairy/butter/cheese, which are byproducts of animals. They don't eat animals with eyeballs. Vegans skip all byproducts, too (including honey). For vegan recipes, try checking out stuff by "Skinny Bitch," and there are a gazillion vegetarian cookbooks. But really, good ole' frijoles work for plant AND protein.
