Happy St. Patrick's Day! It's St. Patrick's Day, and for the first time, in years, I won't be having corned beef and cabbage today. Well, maybe I'll get some next week, and instead of boiling it, I'll use a recipe, I found, to bake it, with cloves and a spicy honey mustard glaze. As stated, a couple weeks ago, I'll more than likely have fried cabbage with it as well. I'll provide the link to the corned beef recipe, in case anyone is interested. Enjoy!

Just finished my dinner of corned beef and cabbage. 12oz cabbage pan fried in 1 tbsp. coconut oil with 1 medium diced onion and salt/pepper to taste - I cook the cabbage until it starts to caramelize (like the onion) - it is my favorite way to eat cabbage. The corned beef was Trader Joe’s brand uncured and sliced (pre-cooked) as my wife ignores her Irish ancestry and hates both so I need to make a small serving and keep it easy…

syndi - Just so you know, the baked corned beef recipe can be modified to be truly low carb by omitting the brown sugar, and honey mustard, and using spicy brown mustard mixed with sugar free honey. Brown Sugar Twin could be used also, but since I've never used it before, in a recipe, I don't know if it will caramelize the same as regular brown sugar, or if it would retain the bitter aftertaste I remember it having; but it's a thought.

Had corned beef and cabbage and thought for sure you would be having it as well. I baked mine and put the cabbage in with the brisket for a short while and it was delicious! Hope you enjoy yours next week.
