Another Frittata Friday is upon us, and this time I will be putting some of my delicious, slow roasted pork butt into it. But that won't be the only thing I add to it. It will also contain a touch of sour cream, sauteed onions, broccoli, crumbled feta cheese and cheddar cheese; I can't wait to taste it. :-) So, what's in your frittata, this time?
Other than that, I'm looking forward to a restful weekend. I finished my recent class, on Wednesday, and I'm glad it's over; no more homework, for the time being. Adding in some extra credit assignments, that were completed; I'm sure I aced this class; or at least did pretty good. :-) Have a great weekend everyone.

No frittata for me tonight but I did have some awesome scrambled eggs for breakfast. Had bacon, butter and veggie cream cheese in it. I've had the cream cheese before and it is very good. But this time I tried the garden vegetable cream cheese which just kicked it up a notch. I'm thinking it would add a nice touch to a frittata.

My frittata turned out pretty good, last night, and since I only ate half of it, the rest will end up being a mid afternoon snack, later on today.
Not much to do today, maybe a haircut and some laundry are in my plans. Other than that, it's going to be a pretty chill kind of day; who knows, I may even go to the dollar show to check out a movie. Have a good one everybody. :-)

Didn't get a frittata in last night. Wish that I would have. My journal tells why and this week I will be planning one into my Friday supper. I did think of you and yours:) and wondered if others were as well. Glad to hear that schooling is over for a bit...and that you can spend this weekend doing something more pleasurable than extra credit assignments and studying. Take care and enjoy....

Well, I had an Indian curry frittata Friday night. I made a spicy curry sauce from scratch, added it to low-fat yogurt to make a cream to which I added previously poached chicken breast cubes. Spread that mixture on a 2-egg frittata base and topped with chopped tomato and cucumber, arugula, peanuts and coconut flakes. Out of this world...didn't miss the rice at all.
