Cooking healthy for my diabetic husband is proving to be quite the challenge, mainly since he tends to be a picky eater. He claims he is not, however, as the person who does the cooking, I maintain that he is, lol. We were talking tonight about options and I was looking at my Pinterest boards for some keto recipes. He isn't willing to substitute something for pasta, would rather just not eat pasta. But I found a recipe that uses zucchini instead of noodles that sounds quite good. Based on the recipe alone and not thinking about the zoodles as a replacement, he agreed he would at least try it. He is not willing to eat spaghetti squash like I do tho, with my homemade spaghetti meat sauce on it. He's not a huge fish eater (I LOVE fish!). He's not really crazy about pork chops either, but he eats them. I think the biggest struggle is going to be finding things for him that are simple for him to fix (he is not a cook and doesn't like to have to prepare much, other than a sandwich) for both breakfast (he's not a huge fan of eggs) and lunch when he's at home and I'm working. I already spend too much time in the kitchen dealing with portable breakfast and lunch dishes for myself, now I'm going to have to figure out his. If he liked what I like, wouldn't be as big a deal. I also have to consider that he is going to require 500 more calories a day than I do. I figured out his BMR and what he needs to keep his caloric intake to for a day to lose weight. He looked at me and whispered "Thank you for taking care of me and doing this for me." I do it because I love him. Things that are worth it are rarely easy. He will have to do his own logging, tho!

My hubby and kids don’t want to ‘diet’. I end up making two meals more often than not and at least 10 times a week for the first 4 months on my diet! Now if I make two meals they usually have to at least try a bite of mine before I weigh and log to see if they enjoy it :). Perhaps he would be willing to take 2-3 bites of yours to see if it’s something he could learn to like or at least tolerate? Hubby likes to cook but not for lunch. If I plant l be away I make double of something he likes so he can just heat it up while I’m gone. Not as much work that way.

Have you considered simply teaching him to fast? Or just turning him on to Cole Robinson (Snake Diet) on youtube? With fasting, he drops the fat quickly, sees immediate results, and beats back the diabetes; and you can give your spiralizer a rest....

I don't mean for this to sound insulting in any way, but maybe try mixing in pureed low carb veggies in his meal, like they do for kids. I used to make mini meatloaves. Super easy and you can keep some in the frig and freeze some for later. You're on the right track with Pinterest. I got a few very tasty keto recipes from the site I Breath I'm Hungry. Everything we made from Mellissa was delicious! She does use a lot of those substitute ingredients, but also has some simple recipes. Good luck. You are doing a good thing for your husband. I get the not logging his food for him. 😄 My husband is on FS, but doesn't even count his calories or log in his meals. He thinks he can "eyeball" his calorie intake. I told him when we started this WOE, that I wasn't going to hold his hand. It may sound mean, but I can't do it for him without sacrificing my own health. I don't have that kind of energy anymore.

My hubby doesn't have much choice at this point. He needs to try to control his diabetes with his daily diet (way of life) as he has been having too many horrible side effects from the new meds he was put on. He's finally realized he HAS to change the way he eats if he wants to be healthy. While I have made some occasional variances for myself when cooking for the family, I have not cooked an entirely different meal for them. They eat what I eat, fix their own, or go hungry!

I don't think he could fast. Whenever he goes too long without eating, his blood sugar crashes and he can't function, then it leaves him feeling drained for hours. I don't know why some diabetics can fast and others can't, but that's not something I want him to try. I've been there when he couldn't move and I had to get something in his system. It's scary. I told him just a few minutes ago that he is just going to have to try new things. I will do my best to make tasty food, but he has to be willing to try something, maybe more than once, before saying no to it.

Your husband sounds a lot like mine. He is a meat and potatoes kind of man and if it is something new food-wise, he doesn't want to try it. Well really with anything new...lol Have you looked into the Atkins Prepared meals at the grocery stores(frozen section with the hungry man type meals)? They would help with him new woe and all he has to do is heat them up.

I just want to throw this out for what it’s worth. What we see in the hospital all the time is men who come in with known medical issues like diabetes, heart disease. They take meds, are on special diets, etc. well, wifey is at her mothers for the weekend and hubby knows absolutely nothing about himself. Doesn’t know the drugs he is on or the dose— or why. If they are diabetic they often don’t know what diet parameters they have, insulin doses etc. the only thing many of them can say is ask my wife, ask my wife. This is not fair to you or to him. The patient needs to be involved in his own care, planning his meals and knowing what all the “words” mean like grams, carbs etc. imagine what would happen if you weren’t there to figure all of this out for him. Who figures it out for you?

yes! my husband is a picky eater and diabetic, plus now he has bad gastroparesis. I dont even know what he can eat, willfully that is! :(

Feel anyone who deal with Diabetes can easily elevate quality of life by getting to know Dr. Richard K. Bernstein's work. He's living proof of stable management, way ahead of time.

Someone here recently talked about using sauteed mushrooms instead of pasta and I want to try that.

I recently tried the Miracle Noodle. It's made from an ancient grain that is soy and gluten free. It smells terrible until you completely drain it but when dry it is similar to a real noodle with only 15 calories and very few carbs. To make sure it's dry and not smelly, I put them in a frying pan after boiling and let the water steam out. Top with anything you'd put on regular pasta.

Same thing here, hubby hates hates hates veggies. I love them. It's hard to cook when you both have different likes and both dieting. Just be happy he is willing to try new things. You can ease him into some things by mixing old favs with new healthy stuff. A bit of real pasta noodles with the spaghetti sqush or zucchini noodles. Good luck!

Oh ya, I forgot. Be sure to have something in the fridg/freezer that he can easily heat up or snack on if you need to be away for a few hours. These guys will use the excuse, "But honey, you were gone and I didn't know what to eat." Uh-hum, there went a whole days carbs or the kids forbidden (thought they were well hidden) snacks. That's the "I couldn't find the celery and safe dip you made but I did find the cookies." syndrome.

I can relate to him😋 I don't like pork chops, I don't care for squash, I tried cauliflower mac and cheese with bacon. I'm just not going to do it LoL. my favorite meals are beef, grilled, cheeses hamburgers, blue cheese, and I focus on one meal a day. if he's a thin diabetic I think they need to eat more often if keto. good luck! you will find foods he'll settle into!

@kenna 1st hubby was like that. This one knows his disease, meds and what he should be doing, just a matter of doing it. Fortunately, he does like most veggies, it's more in the way they're prepared. He doesn't care for spaghetti squash. I will find a low carb alternative pasta to try. I told him last night he's going to have to get out of his comfort zone and be open minded about different food. He quit his diet Coke habit several months ago. I'll introduce new foods gradually as he gets himself into an exercise routine. I think small, gradual changes will work better for a long term effect. Thanks for the suggestions!

Jo, I really think your DH is going to do well, because you're helping and supporting him. As I read these comments, especially yours, I see that photo you posted recently and see how happy you both look. That look in his eyes, is the reason why his improved health will be a reality. I can see that you both want to be around for each other for a very long time. ❤
