Zucchini Noodles

A great pasta substitute.

Ingredients

Directions

  1. With a good potato peeler create long "noodles" by starting at the top of the zucchini and peeling wide ribbons down the length of the zucchini.
  2. Continue making ribbons as you turn the zucchini to get all the green part off first.
  3. When the center portion becomes too thin , set it aside to use for a salad and start a new zucchini.
  4. Heat a large skillet on medium high.
  5. Add the olive oil and zucchini "noodles."
  6. Saute the "noodles" for 2 to 3 minutes.
  7. Season with freshly grated black pepper and salt if desired to taste.
  8. Serve with your favorite pasta sauce. I like to eat these with red sauce & meatballs!

great new weekly meal! so glad I found this! I tried to put an egg white in it to kind of make it like my favorite thai fried noodles, but it was a kinda weird with the zucchini.

So amazing!! Absolutely loved this!! I will be making this for sure again!! I made it with meat sauce and broccoli.

These are grrreat! I put this with a mushroom alfredo sauce, and served it with roasted chicken, and it's one of the best meals I've had in weeks. Shrimp will be my next addition to this mixture.

hmmmmmm, reminds me of something I made way back. Added a little garlic and broiled it with a little bit of cheese on top of it.

Fantastic! Great for IP as you use your allotted 2tsp olive oil, and 1 serving ( 2 c. ) veggies . I used 3 zucchinis -- very filling and delicious!

I'm sure my husband will disagree to the comment "a great pasta substitute" since he didn't fall for the spaghetti squash either, but this looks great to me. I have some at home right now, excited to do this.
