Zucchini Noodles

A great pasta substitute.

Ingredients

Directions

  1. With a good potato peeler create long "noodles" by starting at the top of the zucchini and peeling wide ribbons down the length of the zucchini.
  2. Continue making ribbons as you turn the zucchini to get all the green part off first.
  3. When the center portion becomes too thin , set it aside to use for a salad and start a new zucchini.
  4. Heat a large skillet on medium high.
  5. Add the olive oil and zucchini "noodles."
  6. Saute the "noodles" for 2 to 3 minutes.
  7. Season with freshly grated black pepper and salt if desired to taste.
  8. Serve with your favorite pasta sauce. I like to eat these with red sauce & meatballs!

Easy and great tasting. Mine looked nothing like the photo TamTam submitted, just as a reference. It resembled wide, slightly-green rice noodles.

Yum! I added fresh garlic, and tossed them in a little Cajun seasoning then squeezed a little lemon on them after they were done. I've also topped these with fried bacon pieces. When you go to buy the zucchini to make these, but A LOT. I bought 4 and that barely lasted 2 days. Once you start, you'll just want more and more!

Didn't love it. My family refused to eat it after the required two bites.

Yes tammydr, steaming sounds much better. I would also consider baking them. Even if vegetables are better choices then pasta, frying them diminishes their nutritional positive attributes.

Love. Add a little bit of low-fat mozzarella and/or touch of parmesan and it really seems decadent
