Zucchini Noodles

A great pasta substitute.

Ingredients

Directions

  1. With a good potato peeler create long "noodles" by starting at the top of the zucchini and peeling wide ribbons down the length of the zucchini.
  2. Continue making ribbons as you turn the zucchini to get all the green part off first.
  3. When the center portion becomes too thin , set it aside to use for a salad and start a new zucchini.
  4. Heat a large skillet on medium high.
  5. Add the olive oil and zucchini "noodles."
  6. Saute the "noodles" for 2 to 3 minutes.
  7. Season with freshly grated black pepper and salt if desired to taste.
  8. Serve with your favorite pasta sauce. I like to eat these with red sauce & meatballs!

Pleasantly surprised. I don't really care for zucchini or tomato/pasta dishes -- but I decided I was going to make a simple marinara sauce along with these zucchini "noodles" for lunch. I thoroughly enjoyed the dish. I used PAM cooking spray instead of oil and had to cook the zucchini a little longer -- but it wasn't too shabby! Even my 2-year old daughter ate a quarter of it. Yum-o!

Wow, these noodles are great. I made American Chop Suey for my family and just put the meat & sauce on my zucchini noodles and it was delish!

yuuuummmm. I added more zucchini without increasing my oil and it works very well.

I am obsessed with pasta, any kind, you name it. This is an EXCELLENT substitute. It is really uncanny how well they go with pasta sauce as well as cheese!

Would not say this was like pasta but it was SO TASTY. I did not have a peeler so just thinlly chopped. Will have this again & again 5 star
