Simple chicken soup packed with veggies.
Ingredients
Directions
- In stockpot, bring chicken broth and water to a boil. Cook chicken about 5 minutes, or until done. Remove chicken to cutting board to cool.
- Add onion, carrots and celery and boil for about 10 minutes or until vegetables are tender.
- Add zucchini and mushrooms and cook for an additional 5 to 10 minutes.
- Shred chicken with two forks and add to stockpot.
- Add salt and pepper and stir in parsley.
- Enjoy!

Whole wheat pasta could be added if on Phase 2 or 3. Very yummy!
