Breakfast Meatballs

Low carb meatballs with pork, beef, cheddar, egg and onion that are perfect for a meaty breakfast or any meal.

Ingredients

Directions

  1. Pre-heat oven to 350° F (175° C).
  2. Combine all ingredients and pepper to taste in a bowl, and mix thoroughly.
  3. Roll into 1 1/2" balls or drop by spoonfuls onto a cooking sheet.
  4. Bake for 18-20 minutes.
  5. Makes 50 to 60 meatballs.
  6. Note: freezes well for later use.

These taste very yummy - used 1 1/2 lbs of each (pork and beef) since I didn't have enough ground pork, added ground pepper, garlic powder and used minced onion flakes. Was going to add some chili flakes and forgot, so added some hot sauce to the meatballs I had for breakfast this morning.

These are delicious! I only used sausage, no beef. I also cut out the onions but used onion powder. And my picky family loved them! I will definitely make them again

We used reduced fat sausage & the onion flakes & they were awesome!!

Love this recipe. I did tweak it a bit so the nutritional information may be different. I used 16 oz of sausage vs 32 oz and used ground turkey instead of beef. Delicious and oh so easy to make!

I have made these twice now once with ground turkey and once with ground chicken plus the sausage and they are really good. I also made a homemade tom/spaghetti sauce and add 1-2 TBSP to the meatballs UMMMMMMM!!

I make these all of the time and then put portions of them in baggies or containers and put them in the freezer for days when i don' thave time to cook. They're great for a grab and go breakfast, snack or dinner.

I use turkey sausage in my recipes and the food is still awesome. Plus it's cheaper and lower calorie!
