I have to brag on my meal today. One of the foodie channels I subscribe to on YouTube posted a recipe today that got my mouth watering. I made a few changes to it, and had charcoal grilled tandoori chicken wings and bi-color corn on the cob. OMG! It was out of this world! As I was grilling, my neighbor walked over with a quarter of a HUGE watermelon, so some of that was dessert. The pure essence of summer has made me a happy, happy gal! Well worth waiting 23 hours for. I haven't calculated the macros for it yet, but I'm pretty sure it's well under 80g of carbs. Within my limits for the day. It'll be interesting to see how the scales behave tomorrow. I'm interested mostly in how my body has reacted to the corn. As I approach maintenance, data like that is going to be important. If it spikes insulin, it's off the 'allowed' list. If it promotes inflammation, likewise.
I'm SO grateful for how responsive and communicative my body is, and for my growing understanding of the subtle (and sometimes not so subtle) signals it sends me.

Thanks, all! The recipe for the tandoori inspired chicken wings is as follows: Basically, the recipe revolves around the marinade for the chicken. 1/4 cup full fat Greek yogurt 2 TBS Sriracha 2 TBS Lemon juice 1 tsp cumin powder 2 tsp garlic powder 1 tsp ginger 1 tsp garam masala 2 tsp salt Mix all the above well, then toss the chicken pieces in the mixture until they're completely coated. Let stand for at least 35 minutes. Grill for 10 minutes per side. The coating will blacken some, but that adds to the flavor.

Oh, and the meal clocked in at 49 net grams of carbs...well under the 80 gram limit.

Sounds great. I do a similar marinade for chicken breasts then slice them into wraps with coleslaw for lunches

Way to go! Sounds like a lovely, healthy family meal regardless, Love! You are emulating for your children and your family just what you wanted to! 🙆🏻Go back a few months and compare entries and I think you will be amazed at the amount of life-fulness in your current entries! LOL So Proud!!🙋🏻
