Does anyone make veggie sandwiches? I'm trying to come up with a good one and have listed the ingredients for what I plan on having for lunch. Using sliced avocado, clover and radish sprouts, chopped black olives and a little light mayonnaise on Oroweat's oatnut bread (one slice only). I'm thinking about adding artichoke hearts. One of my favorite local restaurants used to make a nice veggie sandwich is a pita but they no longer have it on the menu. I was trying to remember what they put in the sandwich. I really like the chopped black olives, it is like a spread they are so finely chopped up.
Does anyone buy sprouts? I bought clover and radish sprouts (thought it was alfalfa sprouts but these are actually better tasting). They come in a container showing a total of 4 ounces and indicating one serving is 2 ounces. I probably put less than half an ounce on sandwiches and the container always looks full. What else can I use these sprouts for? I rarely make salads and don't know whether they would be good in a stir fry.

Sprouts on sandwiches are awesome! Cucumber and avocado too. Trader Joe's makes a Roasted pepper and eggplant spread that is awesome on sandwiches.

Caprese sandwiches w/vegan cheese, tomato, basil; it's called "mockzarella" from a local sandwich place here are pretty good. you can also make a mockloaf sandwich from things like faro or bulgar. lots of recipes for making loafs online then you slice them like meat. Some really good stuff out there.

A little cream cheese, cucumber and thin sliced red onion. I have also used grated carrot and zucchini sliced. I think it just comes down to the flavor you are looking for, TexMex, Mediterranean etc.

I have been hesitating to respond to this because i love veggie sandwiches and could write a book here. But suffice it to say that cream cheese is great with almost any veggie combo; i love to use hummus and guacamole as the spreads, and i like to use jarred pickled veggies like olives, banana peppers or giardinara (sp?) mix. Also artichoke hearts, which i think you mentioned. Let us know what you make!

Oh, and idk what your circumstance is, but i try to avoid sprouts. I don't mind them but i don't love them enough to risk getting sick. I guess they get contaminated very easily.

Adameve - spaghetti sandwiches? The closest I've ever eaten would probably be the Sloppy Joes my dad used to make when I was a kid. Loved them! Thanks Dhatura! I thought about cucumbers but rarely buy them because I usually only use half of one and then forget about it until I see it needs to be tossed out! Love avocado on any sandwich. Thanks Katsolo for the ideas! Raineybird - your suggestion sounds delicious. I like the idea of grated carrot, never thought of that. Jegetfit - I'll have to try cream cheese instead of mayo - I usually have some in the fridge for my morning 1/4 bagel. Got scared reading about sprouts making people sick. I think I'll skip them from now on. I buy sprouts rarely and only for sandwiches but feel like I'm wasting money because I use such a small amount and don't want to use after a couple days. Thanks for the information, I'd never read about sprouts causing illness. I made the sandwich with avocado, sprouts, and chopped black olives with reduced fat mayo. It was really good, but messy. I think a pita may be a better choice of bread to keep all the veggies contained. Didn't use artichoke hearts today. Will do it next time! Liv - love peanut butter and jelly sandwiches! But don't make them often. Really trying to figure out a good combo of veggies.

Since you’re supposed to be doing low fat, try Tofutti in place of cream cheese. It’s not bad. They used to have at Trader Joe’s, but I don’t shop there much anymore.

Sliced tomato is always a safe bet in vegetarian sandwiches. It combines well with all the other ingredients you and FS fellows have mentioned. Roasted eggplant and bell peppers too.

Katsolo - I've never heard of Tofutti and there is no Trader Joe closer than 1 1/2 hours away. I use reduced fat (1/3 less fat) cream cheese and mayo. A tablespoon, which is all I use if I do a half sandwich is 3.5 grams for the mayo and 2.5 grams for the cream cheese. I haven't been doing low fat for about a week now because of buying too many snack foods. That should be over with tomorrow (going out to breakfast this morning). Thanks Eva - I forget to buy tomatoes and when I do I never finish them. One of my doctors has given me a list of things to avoid due to acid reflux and tomatoes is on that list. I've never had eggplant - the name turns me off. But I really like the idea of red bell peppers on a sandwich!

Fritzy, try calling them aubergine instead of eggplant; they may be more enticing!😜

I love roasted eggplant. You could make roasted ratatouille, then use it to make a sandwich, get that would be delicious.

Mushrooms! Raw and laminated or Cooked in a pan or in the microwave. You can also grind them and you'll have a delicious spread.
