perks... I totally should have added parmesan! I put it on the salad so it would have really tied that all together nicely. Noted!

binky, yes. Its a nice alternative to using flour, panko, batter, etc. I placed some in a mini food processor and walahh! Kinda like subbing rice with cauliflower.

Wish I had room for an air fryer, but there's just no way in my tiny kitchen. I'd have to put it on the patio.

I am going to try this! I have heard of using pork rinds in place of bread crumbs but wondered what it tastes like. #whatmyhubbydoesntknowwonthurthim

I'm going to try this sometime and not tell RM. See what he thinks before I tell him it's rinds. :0)

looks great, and sounds like a really nice meal!! how long & what temp did you use? or did you use the "chicken" setting?

Kissangelgirl, never thought of using pork rinds as breading, great tip! Haha, Bella...my tum's growling too!

Pixie - temp used was 370 @ 20 minutes and I fliped them halfway through.

I can't tell pork rinds were used. I love them anyway so it wouldn't have bothered me. If you buy regular flaored pork rinds, I would definitely spice them to taste (maybe as you would a regular batch of tenders) but the pork rinds used here was hot n spicy so there was lots of flavor!
