Okay!

So here we go again.

Restarted Keto (again!!!) yesterday. I know there's been an upsurge in interest about this WOE lately, thanks to a documentary on Netflix called "The Magic Pill". I don't have Netflix so I haven't seen it yet, but I've heard plenty.

My thing lately is I'm not eating enough veggies. Well, I'm eating celery at night, but not that much of anything else. And I know I need to eat my veggies! There's actually a list of the top veggies to eat on a keto diet from this wonderful doctor, Dr. Ken Berry, on YouTube - https://www.youtube.com/watch?v=UsXlwieBp8I. He explains in a fun way why each one is so good for you. But for my quick reference, here's the list:

Asparagus
Cabbage
Broccoli
Kale
Celery
Cucumbers
Brussels sprouts
Olives

Cabbage is probably the only one I don't care much for, but I'll sure learn to eat it! I don't mind it with ground beef and all, so there's that.

Now, off to send out a few resumes and then go for a walk before it gets warmer (and muggier) today.

There's a great low carb recipe online for cabbage and ground beef (I liked it better w/ground pork). It's called "Crack Slaw"! They say it's called crack because you get addicted to it, and slaw because most people use the slaw mix from the store. I loved it but I'm going meatless now and I have made it without the meat. It is so delicious!

I have found some great kale or cabbage salad kits that are delicious and easy. I add an avocado as well. Last kit I added shredded brussel sprouts.

I add shredded red cabbage to all my salads and sandwiches and wraps. I love the color and crunch!

I cook my cabbage in chicken broth in my pressure cooker for 4minutes (plus the 20 for it to come up to pressure). It makes a great soup.

Crack slaw is good! It reminds me of inside of an egg roll. I would think spinach would be a great Keto veggie too. Making a quiche with veggies in it helps to get veggies in at breakfast! Even an omelet would work!

Cucumbers and olives are fruits. But they are still keto friendly!

the local whole foods does a braised cabbage with pork that is amazing - it is a really simple and nutritionally reasonable dish.

I buy a bag of coleslaw use it in my stir fry with chicken, delicious!

I microwave a bag of precut cabbage(coleslaw) with bacon strips and a little butter and it's very good. It's even better if you can do it on the stove and let the cabbage caramelize a bit.

I do like Dr Berry. At the spearhead of this Keto movement I see a plant free version, and Dr Berry is currently trying it out for himself. Like me, he notices improvement in wellbeing. He explain it with that our pool of DNA can influence if it is suitable for us or not. In a nutshell, Keto is to minimize the blood sugar, to allow the body to fully focus on using fat for fuel. It can be beneficial to try a day with very low amount of plants to see if that feels better than a day with more. You may find a mix that allow you to feel better for your own body mix of DNA.

Pinterest has a great recipe for something called Crack Slaw. More fat than protein and yummy. Hubby not a fan of the cabbage but said it tasted like the inside of an egg roll and asked for thirds. On my Keto journey Pinterest has been the greates
