A great make ahead that you can toss in the freezer and thaw when you are ready.
Ingredients
Directions
- Brown the turkey and onions in a non-stick pan.
- When the turkey is opaque, add the taco seasoning and a little bit of water to help distribute the seasoning.
- Stir in the refried beans and the canned tomatoes.
- Spray a 9x13" glass baking dish with non-stick spray, and line the bottom of the dish with crushed tortilla chips.
- Spread the turkey mixture on top of the chips, then top with 1/2 of the cheese. Repeat this layering with the other half of the turkey mixture and the cheese.
- Bake in a 375 °F (190 °C) oven for about 25 minutes until the cheese is all melted.
- Serve on top of shredded lettuce with tomatoes and possibly fat free sour cream.
- Note: once cooled down to room temperature, you can put it in a ziploc freezer bag and into the freezer.

I have not tried these yet but they look fantastic. My only comment would be to watch that sodium. 1,149mg seems like an awful lot to me. I think one way to reduce that is to get the low sodium taco seasoning or make your own.

Delicious! I used low sodium taco seasoning (Chi-chi's is one of the lowest). Will definitely make again.

This is super good! I used corn tortillas that I tore in to strips instead of chips. Light sour cream and the 100 calorie pack of wholly guacamole. YUM

This does look good as for servings the recipe says 8 servings. I would bake in a 9x13 pan and cut down the middle and then cut 8 servings
