Sweet Potato Fries

Sweet potato with butter, honey, salt, pepper and cayenne pepper.

  1. Rinse and clean an extra large sweet potato.
  2. Slice into 1/8 inch slices.
  3. Melt butter, add cayenne pepper, salt and pepper. Use to taste, best in pinches.
  4. Heat oven to 350 °F (175 °C). Place fries onto cookie sheet and drizzle with topping.
  5. Toss sweet potatoes and lay flat onto sheet. Put in oven. Cooks for 30 minutes, flip fries 1/2 way through.

I followed the recipe, but to make it vegan I eliminated the butter and used paprika and chili powder instead. Came out great just the same, and delicious!

I replaced the butter with a little bit of olive oil and it came out wonderful. My whole family was fighting for them! The directions don't explain what to do with the 1/4 tbsp of honey, but I'm guessing that is part of the "topping" you are referring to.
Hard recipe to follow. Plus, they were soggy.
