Spaghetti Squash with Cheese and Vegetables
Using spaghetti squash this is a veggie rich, cheesy casserole, almost like a lasagna and is a lower calorie alternative.
Ingredients
Directions
- Preheat oven to 375° F (200° C). Mix the cheese together, set aside.
- Heat olive oil in a skillet and add the onion, peppers and garlic. Sauté over medium heat for about 5 minutes. Add crushed tomatoes and basil. Simmer uncovered for about 15 minutes.
- Mix squash well with the cooked vegetables and put half in the bottom of a large (13 x 9") baking dish.
- Top with half the cheese mixture, followed by the other half of the squash mixture, then the rest of the cheese.
- Bake for 30 minutes or until cheese is bubbly and slightly browned. Let cool 10-15 minutes before serving.

What is spaghetti squash? Can i get it in sainsbury's?

It looks like an ordinary squash inside and out when it's raw .. thick skin, full of seeds which must be removed etc etc. But after it's cooked, the flesh separates into long strands that resemeble spaghetti. It's also referred to as winter squash and it's found in the fresh vegetable section.

This was the first time I cooked with spaghetti squash. I always wanted to try it. The dish was delish! However, I added butterball Italian style turkey sausage (hot-as in spicey) for my husband. I squeezed it out of the packaging and grounded into the sauteing veggies. If you use the same brand for the turkey. The meat added about 60 more calories per link to the meal. Followed the rest of the intructions as is. That's just what I did. My 3 year old daughter loved it. My husband is looking forward to left overs. We hardly do left overs.
