Grape & Chicken Salad

With grapes, nonfat mayo, dill and mustard this chicken salad is perfect.

  1. Coarsely chop chicken breast (for a twist grill it first in stead of broil) or use a food processor.
  2. Half the grapes.
  3. Add all ingredients and blend well with a fork.
  4. Serve on a bed of lettuce or a whole grain bun.

This was quick and easy to make! I added some curry powder and reduced the mayo a bit. Served with low-carb wraps and spinach.

I used packaged grilled chicken breast strips and that made it even faster and easier to prepare. Very tasty. The whole family loved it.
