Fire Roasted Tomato Soup

Creamy tomato soup that is perfect with toasted focaccia or ciabatta.

Ingredients

Directions

  1. In 3-quart saucepan, warm extra virgin olive oil.
  2. Add onion and garlic; cook 2 to 3 minutes, stirring constantly, until onion is crisp-tender.
  3. Stir in tomatoes with juice, broth, 1 tablespoon of the basil, sugar and pepper flakes. Heat to boiling.
  4. Reduce heat; cover and simmer 15 minutes. Remove from heat; pour mixture into large heat proof bowl; cool slightly, about 15 minutes.
  5. In blender, place half of the mixture. Cover; blend until pureed. Return to saucepan. Repeat with remaining mixture.
  6. Heat over medium heat until hot. Remove from heat. Stir in cream and remaining 1 tablespoon basil.
  7. Serve with a low calorie version of grilled cheese and enjoy!

I don't understand half the complaints. Mostly because this recipe doesn't suggest that it's vegan and it's fat free half and half so it doesn't add fat to the dish. It's got a good flavor, and a little kick to it with the red pepper flakes. Very nicely done.

Leave off the sugar and it's as healthy as it gets.

In addition to half&half, it also has added sugar. I am sure it's delicious. I am going to try it without the half&half and sugar.

This was great...my family loved it, we had it with with a low cal version of grilled cheese sandwiches.

Oh my goodness this was soooo good. I didn't have half and half but I had whipping cream and 1% milk, so I combined them to make a substitute for half-and-half. Tasted amazing!

The recipe is not vegan (requires dairy and chicken products) Nor is it low-fat (requires half&half) Not suitable for anyone on a low-fat diet or a vegan diet.
