Semi-sweet and tart snack that is both healthy and delicious.
Ingredients
Directions
- Place cucumbers and onions in a non-metallic medium bowl.
- Combine remaining ingredients in a small mixing bowl. Stir well. Pour over cucumbers and onions.
- Cover and refrigerate for at least 2 hours. Stir occasionally.
- Note: Splenda is optional as well as the vinegar. Have fun and add what you feel would taste best.

I do this with apple cider vinegar and add crushed oregano to it. I keep this in my fridge all the time. It's great added to a mixed green salad or served on its own as a side dish.

My mom used to make this all the time when I was growing up.. especially in the summer when we had plentiful cucumbers.
I'll have to try it w/Splenda. I'm always looking for zero point foods that are yummy!
