Cilantro Lime Slow-Cooker Chicken

Chicken, slow-cooked in cilantro, lime, and salsa to super tenderness and fork shredded.



  1. Stir together salsa, cilantro and lime juice.
  2. Add chicken, if frozen stand the breast up on their sides so the salsa can flow between them.
  3. Add more salsa to mostly cover, if needed.
  4. Cook on high in a slow cooker for 6-8 hours.
  5. Drain, retaining chicken, tomato and pepper chunks, then fork shred the chicken.

This sounds great and right up my alley. I am looking for more easy crock pot recipes.

I absolutely love this recipe. It has definitely become a favorite around here since it is so easy and delicious. I love a great crock pot recipe! I start with my chicken breasts frozen since I have them in the crock pot for around 10 hours. Also, I do not drain the sauce because the chicken is even better the next day after the sauce soaks in.

Easy and excellent! If you like acidic...I don't mind it at all! I added some spiral noodles and kept some of the sauce. My family LOVED IT!
