Breakfast Meatballs

Low carb meatballs with pork, beef, cheddar, egg and onion that are perfect for a meaty breakfast or any meal.

Ingredients

Directions

  1. Pre-heat oven to 350° F (175° C).
  2. Combine all ingredients and pepper to taste in a bowl, and mix thoroughly.
  3. Roll into 1 1/2" balls or drop by spoonfuls onto a cooking sheet.
  4. Bake for 18-20 minutes.
  5. Makes 50 to 60 meatballs.
  6. Note: freezes well for later use.

Awesome! I only had 1lb of the sausage so I cut back the eggs to 1, I left out the onion and I added a bit of beef base, onion powder, garlic powder and seasoning salt. They were so yummy, my girls ate about a dozen between them and hubby wants them in spaghetti sauce for dinner!

These taste AMAZING. I took out the onions for induction phase, just to stay on it. You could probably use onion flakes and have a few less carbs.

Did the numbers on this. If you use a low fat cheese and sausage and make 50 - 60 meatballs, each ball is 1 point. Not bad. Can't vouch for the taste as I haven't actually made them yet.

This is a great little recipe as you can use them in many ways, for lunch, dinner or snacks aswell. Superb for Induction Phase.
