A pat of butter on meat while cooking adds moistness and flavor. As well as a glue for seasonings. This is especially true if you put seasoned butter under the skin of poultry, this also makes the skin super crispy. Another thing is just to use olive oil, butter, or grape seed oil when cooking in place of a baking spray.
