Tbaygirl's Journal, 20 September 2017

Well half way through week 3 and I could have killed someone for a bag of chips yesterday, just tried to keep myself busy and eat some broccoli with dip instead. Funny how broccoli has become a treat...lol Anyway one of my co-workers and fellow chipaholic told me she had bought some pork rhines and that had satiated her cravings, so will pick some up, never had a pork rhine before will see what they're like.

Happy Hump Day Everyone:)

If you never had pork rinds..they smell awful...but they taste Awesome! Don't let the smell of them dissuade you from eating them. :) I like the original kind, no extra or special seasonings.

Oh you can also thinly slice yellow squash and zucchini, lay them on paper towels to draw out excess moisture, then bake them in the oven with olive oil, salt and pepper and they are crunchy and delicious. They were labor intensive and I probably made a family size bag of chips out of them. But they were so tastey my daughter who was 3 at the time ate handfuls of them.

Thank you Cherik! :) There is a ton of Zucchini and Squash here in Florida this time of year. It grows really well here, so the price is usually really low for it.

Pork rinds are a staple in our house. If you are on Keto or low carb WOE they are a life safer. I like the plain ones too. My husbands absolutely go to snack.

I even use the spice from the bottom of the bags of the spicy pork rinds w/broth, olive oil and hot water as my cup of soup for lunch. Don't judge me LOL.

I use them to "bread" pork chops or add to meatloaf

I crave chips too, and have given in twice since I started my current weight loss effort. Just got back to business the next day. I've started eating a dill pickle a couple times a week to see if it helps stop the cravings I get for salty things. I rarely crave sweets and I think that's because I indulge in a cup of hot chocolate most days. A SMALL cup, half of what I used to have.

Lots of different kinds of pork rinds; some have sugar of some sort. And some higher fat than others. OMG I need to copy @Ches' soup recipe. And try them crushed to make frikadeller. Looked at summer-squash chips, but carbs seemed too high for my current preferences. This is terrible, I'm not hungry but I'm going to eat some pork rinds now.@Fritzy, I make non-sweet hot chocolate a few times a week, and it hits that chocolate spot pretty hard.

But WAIT! A pork skin accidentally fell in this broth and instead of taking it out, I had some in the spoon.... eureka...a new soup... Coach Ches Soup. I'll make it tonight and take pictures. Excited!

Et voilà, Coach Ches' flash of genius finally provides American answer to Proust. Madeleines, schmadeleines! You might have solved the LC French Onion soup challenge as well. We might have to write a pork rinds tribute cookbook to Tbaygirl.

Somebody teleport me off this commuter van into my house 80 miles away so I can get into the lab and make it happen!
