I've always thought these were fun, but I've never really liked the taste...do your eggs end up coming out tasting rubbery? And if not, what is your secret?

A new way to eat eggs! Looks delicious but how do prevent your eggs being overcooked & turning rubbery?

I haven't had any issues with rubbery tasting eggs...I did add an extra egg into the sausage mixture to help them stay together while they cook. Also, be sure your hard-boiled eggs are dry (use a paper towel) so the sausage doesn't come off the egg. I have a tiny oven so I baked them at 350°F for about 1 hour turning every 10 mins or so to brown.

I love the fun you have with your food. Food is for enjoying with the eye as much as the your taste buds.

I'd heard the term Scotch eggs, but had no clue what they entailed until I saw a gal make one on "Cooks Vs. Cons" on Food Network a few days ago. Very intriguing. Thanks for posting!

@rmscott1 I just started the ketogenic diet and haven't been doing it long enough for any change in my cholesterol level. I typically have between 2-4 eggs per day on days when I eat eggs (not everyday). For more info on Keto/eggs/cholesterol: https://www.ruled.me/the-ketogenic-diet-and-cholesterol/
@guadizz1995 & deblyn626: I posted the recipe/info earlier in this thread...check that webpage for details!
