Hot Italian sausage Scotch eggs! I have way too much fun with my food... ?

I've always thought these were fun, but I've never really liked the taste...do your eggs end up coming out tasting rubbery? And if not, what is your secret?

I haven't had any issues with rubbery tasting eggs...I did add an extra egg into the sausage mixture to help them stay together while they cook. Also, be sure your hard-boiled eggs are dry (use a paper towel) so the sausage doesn't come off the egg. I have a tiny oven so I baked them at 350°F for about 1 hour turning every 10 mins or so to brown.

I'd heard the term Scotch eggs, but had no clue what they entailed until I saw a gal make one on "Cooks Vs. Cons" on Food Network a few days ago. Very intriguing. Thanks for posting!

@Robscastle how many eggs due you consume each day and do you have high cholesterol ? I remember Scotch eggs from when i lived in the UK. loved them.

@rmscott1 I just started the ketogenic diet and haven't been doing it long enough for any change in my cholesterol level. I typically have between 2-4 eggs per day on days when I eat eggs (not everyday).
