i sat in the car an ate 8 mini cheesecake bites..... after a perfect clean eating day...lol... afterwards I said at least I didn't have a soda.... So today is Wednesday and I'm doing just fine!!! So will you!!

I'm a chocaholic and always say "chocolate: the other white meat".
But then I make a lot of LCHF chocolate and never miss it. It's very simple: 2 sticks of butter, 8 tbsp cocoa powder, 6 packets of splenda, a dash of vanilla, and optional 1 tbsp of peanut butter. Warm all this up and mix well, then pour in a muffin pan and store it in the freezer. It's about 1.5g of netcarbs per chocolate "pattie" (they actually look a little bit like Reese's peanut butter cups). You can also replace one stick of butter with 4 tbsp of coconut oil, the rest is the same. Sometimes I make combinations of dark chocolate (on the bottom) and white mint chocolate on top - using cocoa butter and peppermint essential oil, or up the peanut butter for a peanutbutter flavor and might even throw in a few crushed peanuts. Or make it real dark with sea salt or chili peppers.

I agree with Dayberndt, check out 'Fat Bombs', very low carb... Not sure if your goal is to regulate your insulin response or not, but Fat Bombs tend to have 1 to 2 carbs in each. Very filling and a high level of satiety. Your friends will not believe that they're low-carb.

I bake lots of low carb goodies for my husband, including cheese cake with no-sugar chocolate chips, brownies, etc. Tons of cookbooks on Amazon and I follow low carb bakers on Pinterest.
I can find some good recipes in keto, paleo, and gluten-free cookbooks but have to do substitutions because they aren't always low carb. They often offer low carb substitutions, though, so can be inspiring at least.
What I DO miss is the fabulous chemical reactions of real sugar and flour in recipes but accept that as part of making myself healthier. But I DON'T miss that feeling of returning over and over again for "just another smidge" of the treat just because the insulin beast has been awakened by my choices. ;)

You guys are AWESOME thank you I'm going to try it. Have you heard anything about Splenda and artificial sweeteners slowing weight loss? I never used it before then started during phase one , one day when I couldn't bear black coffee anymore, and got a bad stomachache. But I also overate that day ... Had one today in coffee and my stomach doesn't hurt. In fact I ate really well today and also only 650 calories. Didn't try to it just worked out that way. And I'm not starving. Probably a layer of MnMs in there ... Lol. You guys rock so hard!! Thank you for all the support!!

Yea, the internet is full of conflicting information. I didn't notice any "slowing down", but if you are really worried, just use stevia extract - the real deal will be a brown liquid. the only drawback is that it leave a very faint bitter aftertaste but you get used to it. In fact, after using stevia in my morning coffee for close to 8 years, one morning, when I had discovered that I had run out of it and had to buy some, I used a packet of splenda in my coffee instead of stevia, and it tasted funny to me!

Sadly there's no way I'm quitting drinking. It's only weekends I don't drink daily. But um yeah...single mum night out??? Bring the vodka THIS way ....and vodka has the lowest calories I heard ... ;)
