Happy Monday Morning!


I think it is going to be a beautiful day, weather is warming up nicely. Checked out my little garden this morning and the tomatos are really shooting up nicely. Planted some lettuce in pots for the first time, will see how that does. Everything else looks as promising as ever.

So my weekend of increasing my calories as shows an uptick on the scale as expected, no worries about that. Going to stay between 1600-1700 calories to get this metabolism moving and see how that goes for the remainder of the month.

I was going to make the Black Bean Chocolate Brownies yesterday, but had no black beans in the pantry...WHAT??? So, I had read somewhere about a recipe for brownies using prunes, found one here for Cocoa Brownies that used applesauce so swaped that out, added in some coffee (this is a must in any chocolate dessert as it enhances the chocolate flavor but does not make it taste like coffee-Barefoot Contessa tip). They came out really good, you can check them out in my snack entry for yesteray 6/5. Just click on it in my food log, scroll down and in the middle of the page you will see all the ingredients listed. Pretty easy, mix all the wet, sift all the dry, combine and bake 350 for about 30 minutes. I did steep the prunes in the coffee in the microwave and then mash with the back of a spoon to make sort of a paste and then stir it in with the wet ingredients. Check them out, maybe they fit your plan!

Not a fan of prunes...I'll take a pass, but happy you are doing well! No worries on the uptick...it'll come right back down :) Much Love.

Oh, Babs, I love prunes, will check out that recipe....although I am pretty sure they are not on my plan...:) Glad that the garden is doing well....my container plants are all doing exceptionally well. A hint for the tomato plants...sprinkle a cup of epsom salts on the ground, just outside the drip line, once a month! You will have the biggest, sweetest tomatoes you have ever grown! Promise!! Thanks Stef, I will get me some epsom salts and give that a try. So the prune brownies came out OK, definately not like a cakey brownie, almost like fudge they are so dense. I am going to recalculate the recipe and leave out the nuts and I used a 7x9" pan which made 16 instead of 12. Believe me, you can not taste the prunes but they sure help to get things movin' if you know what I mean! :) LOL

Cool, I don't have much of a problem with that, but I just love the taste of prunes!!!! They are soooo yummy! I told my dad about the epsom salts 2 years ago (he is 83) and he had never heard of it either...he tried an experiment and did half with, half without, then had people blind taste test them. The ones with were bigger, healthier, and sweeter (MUCH better tasting) than the ones without. He will never plant another without using it. Have a great evening!

Hi Babs - I bet you cannot believe how much more food you can eat with that slight increase of calories :) I also cut back too much at first and really battled, then when I increased my calories to 1800 I lost more weight than when I was on 1200 - really a strange concept to me, but fortunately one that works :)

Hi, Babs! I really am getting jealous of everyone's gardens! A few weeks back I was complaining about being rather slow moving and several of my good buddies here suggested eating prunes, especially as I enjoy sweets. I think your brownies could be just the thing for me as I especially love chocolate sweets! Thank you, my friend!

Triaby - I am so glad to hear that, I am counting on it!! The science around it is really crazy but if you think of it like putting fuel in a furnace so it burns hotter I guess it makes sense.
