In my quest to add more protein to my diet, here is today's experiment: I separated some eggs (plopped whites into egg poacher and yolks into garbage) and shredded the poached whites so they look like mozzarella.
By adding 4 egg whites to my salad I get 14 extra grams of protein for only 68 calories. On many days this 14 grams is about what I am lacking!

That is always a big quest..to find ways to add extra protein. I eat eggs, yolk and all. The added fat calories aren't that important to me. I don't restrict my fat intake. I just try to limit my starchy carbs and try to keep my calories under 1800 and above 1200. Keep up the great work!!

Pumakitten - I should have clarified that this egg white is in addition to the whole boiled egg. The yolk has good fat, vitamins, etc. so I am not giving up eating the yolks. I average 2 whole eggs/day. The added whites are for an increase of protein for just a few calories. Kind of like adding Whey but and not drinking the cream.

lol, well smack my forehead!! I had purchased a good protein supplement, and I sometimes add it to my second cup of coffee in the morning, sometimes to a bowl of oatmeal, instead of mixing it with milk, or water. I have a fondness for eggs too. I have to watch out and keep my consumption to one or two a day. I am going to be making some pickled eggs for easter soon, and I'll have to watch out there too!! lol!! I would eat them like candy if I let myself!!

Sandy - Plan backfired. Turns out I don't enjoy mountains of shredded egg white in my salad! I am frustrated trying to get my protein intake over 100 grams/day. I may resort to carrying jerky around in my back pocket - LOL.

Keep experimenting, my sweet friend! I like egg whites in my salad, but also eat protein bars & drink protein shakes to get enough protein. We're each a study of one... So keep your lab open! Xoxox

Yeh, I know how you feel, Buffy. I ended up just going with the protein powder... it is *really* hard to keep everything else in check and raise protein without it. If you're not anti- artificial-sweeteners, check out Syntrax Nectar. It is really good, but has sucralose in it. On the flipside, it has no carbs at all...
