Djburney's Journal, 22 October 2012

I'm not sure what last night was about, but I didn't succomb. I had a really nice day alone, went to the farmers market and bought some very fresh veggies and fish, Home Depot for fall flowers, and then went to my little community pool to catch a few rays of sunshine and visit with a neighbor (can you tell I live in Phoenix?) Later I did some more painting and got into a really good book and made a nice dinner for myself and watched a couple of episodes of Boardwalk Empire.

This sounds like my single mother's life! And that's not a bad thing at all, it was a great day. But in the evening, I felt that old feeling of wanting to graze. The time in my past when I would have made some popcorn or dug out some stale cookies that I just remembered are in the back of the pantry. I no longer have popcorn and my pantry is completely devoid of anything I shouldn't be eating, so I tried distracting myself. I called my daughter on FaceTime (video call, Mac's version of Skype) and we talked and laughed and I showed her my projects and when I hung up, I didn't feel like eating anymore!

Hmmm...that tells me I was lonely, and my brain wanted me to do what was familiar to fill that little empty place. Instead of filling it with food, I filled it with what I really needed...some love!

Some flowers can do wonders for your mood can't it? Nice distraction and I'm sure it was more enjoyable!

Fabulous choice last night. I really beleive in distractions - but it can be hard sometimes. And, the scale inched down for you, too! Woot!

All of the things were good, but it was love from a loved one that I needed. And I'm so fortunate to have so many wonderful loved ones in my life.

You done good! I'm proud of you. I made 3 cookies sheets of Kale chips this weekend. Each sheet was about 2 cups and the green goodness. Best for the munchies!

What are Kale chips? I like healthy snacks, but I've worked hard to get out of the habit of snacking at all on anything, healthy or not. I'm afraid to restart that habit!

kale chips are made by taking kale (a leafy green) and baking it in the oven with some oil and seasonings. They are a good sub for potato chips. I also like roasting chick peas and sprinkling cheddar popcorn flavoring on them.

Look online for a Kale Chip recipe. I use Lacinato Kale (Italian Kale). I wash the kale, dry, gently slice the leaves from the stems. Cut the leaves into about 3-4" pieces. I measure out enough on parchment paper on the cookie sheet so that they don't overlap too much. Then I use less than a tablespoon of slightly melted coconut oil, a tiny bit of salt (less than 1/4 tsp) and sprinkle with smoked paprika. Cook in 350 over for 8-10 minutes. Some get crispy - some not but either way I love them. Let me know if you can't find a similar recipe online. Olive oil works and I have also used regular kale when I could not find the Italian. :)

I cleaned all the Kale on Friday and put it in a zip lock with a paper towel. Luckily it kept well through the weekend so I could make a fresh batch every day. It does not keep well once it is cooked.
