Zucchini Noodles

A great pasta substitute.

Ingredients

Directions

  1. With a good potato peeler create long "noodles" by starting at the top of the zucchini and peeling wide ribbons down the length of the zucchini.
  2. Continue making ribbons as you turn the zucchini to get all the green part off first.
  3. When the center portion becomes too thin , set it aside to use for a salad and start a new zucchini.
  4. Heat a large skillet on medium high.
  5. Add the olive oil and zucchini "noodles."
  6. Saute the "noodles" for 2 to 3 minutes.
  7. Season with freshly grated black pepper and salt if desired to taste.
  8. Serve with your favorite pasta sauce. I like to eat these with red sauce & meatballs!

Made this for dinner tonight with pasta sauce & ground turkey. It was so good! Super easy to make, too. This will definitely be added into the regular dinner rotation.

I really enjoyed this. I'm not a big zucchini fan and Was skeptical...really zucchini replacing pasta??? Will definately make this again!

Don't get me wrong, it was good for what it was and I'll probably try it again because I may not have cooked it right. But I would never mistake this for actual semolina or whole wheat based pasta. I cut the oil in half to save on needless calories and fat.

I used Butter Flavor Pam when sauteing. These were great! Very satisfying and filling! Not to mention healthy! :)

LOVE THIS!!! I chopped up the thin part of the zucchinis and added them in. Also, I added onion and mushrooms. Whole Foods has a delicious organic fat-free pasta sauce that I added straight into the skillet. Perfecto!

This was a nice treat, I had been missing pasta. My husband come up with the idea of using the largest holes in a grater with the long side of the zucchini to make noodles more more 'spaghetti' like and it worked out great! Plus he did the work for me <3
