Vegetable Soup with Lentils and Barley

A delicious and filling vegetarian soup.

Ingredients

Directions

  1. Place water in a large stock pot and add onions. Cover to boil.
  2. Add lentils and barley to boil for 10 minutes.
  3. Add all other vegetables to boiling water. Boil on high for another 5-10 minutes (time varies depending on how crisp you like your vegetables).
  4. Turn off stove add salt and pepper to taste and enjoy.

Oh yes because it's made with all of my favorite veggies. I could eat on this soup throughout the day and not get tired of it. Also, can add my favorite baked or grilled fish with it.
