Spinach Stuffed Chicken Breast
Truly delicious spinach, onion and feta stuffed chicken breasts.
Ingredients
Directions
- In a large non-stick skillet, heat olive oil; sauté onion until golden, 5 minutes.
- Wilt spinach (steam or heat damp in pan); stir in lemon zest, feta, salt and pepper. Set aside.
- Divide spinach mixture between chicken breast cutlets.
- Roll up and secure with toothpicks.
- In same skillet, heat remaining oil over medium-high heat.
- Cook chicken, turning occasionally until golden brown and cooked through, about 10 minutes.
- Remove toothpicks.

I absolutely LOVED this recipe, and so did my husband. That is no easy feat! I didn't pound the chicken out enough, so I didn't so a roll up but more of a wrap. Still wonderful though

This tasted rich and delicious! I had to butterfly the chicken breast to stuff the chicken, and I finished it off by baking it in the oven. So Good!

I substituded a reduced fat mozzarella stick for the feta cheese and used a little lemon juice instead of lemon peel. MMM it was so good and very easy to make!! Definatley pound out the chicken first.

I haven't made this yet, it sounds delicious and I plan to make it tonight, but I just entered all the ingredients into a calorie counter and there are 401 calories per serving, just so everyone is careful! My diet is based on calories so if I go over, I stay fat! :-D
