Meatloaf with mushrooms, onions, tomatoes and peppers.
Ingredients
Directions
- sauté mushrooms, green peppers and onions in cooking spray like Pam until onions are clear.
- Add beef broth and let simmer for 5 minutes.
- Set aside and allow to cool.
- Mix ground beef and 1/2 the can of crushed tomatoes.
- Fold in mushrooms, green peppers, onions and beef broth.
- Shape in to a loaf and make a reservoir in the top for the rest of the crushed tomatoes.
- Bake at 400 °F (200 °C) for one hour or until juices run clear.
