Lemon Flax Seed Muffins

Sweet baked treat for any time of the day.

Ingredients

Directions

  1. Cream butter until light and fluffy.
  2. Add lemon zest and sugar, and beat for 4 minutes.
  3. Add vanilla extract and eggs one at a time.
  4. In a separate bowl, sift and whisk other dry ingredients.
  5. Slowly combine the two mixtures, along with yogurt.
  6. Preheat oven to 425°F.
  7. Lightly grease muffin tins and fill each 3/4 full.
  8. Bake for 5 minutes at 425°F, then drop down to 400°F and continue baking for another 15 minutes until the center have set.
