Dinner last night was interesting. We went to a local fish place for our anniversary. I decided on rainbow trout which was topped with beet greens and peaches (I know, high carb, but in season!, and not a whole peach...worth it!), and replaced the rice side with sweet potato fries. Baked sweet potato would have been better, but it was not an option.

The trout was fabulous! Loved it. The fries, not so much. I make my own sweet potato fries in the oven, after tossing them in some coconut oil or palm kernel oil. The whole family adores them...and there are few foods I can say that about! The fries last night tasted of oil that was old or off. Just not great.

And,...after I finished my meal I was more hungry than I was when I began it! It made me feel the dramatic difference in satisfaction/satiety that I have when I cook at home, with plenty of good fats, versus eating out with who knows what. Both my husband and I woke this morning feeling gassy and bloated. I actually woke up about 5 with very sharp gas pains. Don't know what it was, but it was not pleasant!

Lesson learned, eat at home whenever I can! Having to avoid not just sugar and gluten, but also dairy, and eggs presents some challenges that I have not quite figured out yet for eating away from home. Eventually restaurants will change and adapt; some of them anyway. This restaurant did mark items on the menu as gluten or nut free. I came home and mixed up a batch of my "faux chocolate mousse" with avocado, cocoa and a mix of fats. It is fast, easy, delicious, and helped me feel satisfied!

Been researching a few recipes on line for fat bombs! Found a few I want to try out. Been getting a few new ingredients, like coconut butter. I guess it is just ground coconut, like peanut butter, almond butter, etc. May look into making my own in the future to save a few bucks. Hard to find, and not cheap!

Some of my favorite sites for recipes are nomnompaleo.com and grassfedgirl.com
Both sites have lots of pics, simple straightforward recipes. And the results match the promise! I am planning on buying Nom Nom Paleo's book, just to send her some love. Gotta support those who help us on our way. :-)

Decided to take a break from recording yesterday. Not because I was eating off plan. Just because I didn't feel like spending the time recording.

Been tracking my measurements, weight, and some other signs/symptoms of my health in a tracker that came along with the exercise program I started about 7 weeks ago. Overall, I am down about 8 pounds since I began the program, but I also made some changes to my diet a few weeks before that, eliminating eggs, dairy, nightshades and peanuts. (already eliminated gluten, corn, sugar, and soy) Since then, I am down about 15 pounds. That is good.

But, I am a little frustrated with how I seem to have been stuck in place for the last 6 weeks. Looking at my measurements and changes in weight, and they have barely moved in that time. Big drop and first with the dietary changes, then another good drop the first two weeks with the exercise program. And now, stall. It is not just the weight, but also my measurements.

I do feel better. I feel more clear headed, and have more energy. My skin looks amazing, (for a 57 y.o.!) and my nails are strong and smooth. I can get around more easily than I could before. The exercise program incorporates functional movement (getting up and down off the floor going from one exercise to another, repeatedly), and that has made a big difference. I am so happy about all of these things. And they keep me motivated to stay on track with my program.

But, I am sick and tired of being obese. I have been working at this for longer than I care to think about. And that scale barely budges. I get all sorts of improvements in my general health and well being. But, I would like to see the side benefit of weight loss. This is not just because of my ego. But also the reality that carrying that extra weight is hard on my joints, and my blood pressure which is borderline, would be much better if I could drop some weight.

This is not quite a rant. More of a whine I suppose. And I know whining is unattractive. But, if you don't want to hear it, nobody is making you read this! And, I feel a little better getting it out of my system.

In the meantime, I will continue to work at this. Looking for other possible causes of this resistance to weight loss. Even if I never lose another pound (heaven forbid!!!), I will continue to eat this way. I do feel better, and my tastes have changed. I like real food. I like cooking and knowing what I am eating. And I love the improvements in my health that I have experienced. I do not want to lose those.

I think I need to change my diet on here again, to be on my own diet, and just keep it there.

Over time, I have seen that the perfect diet for me is as elusive as the perfect fitting pair of jeans! One pair has the perfect length, but gaps around my waist. Another fits great around my hips, but won't snap! But, obtaining the perfect diet for me is easier actually than finding those perfect jeans, if they even exist. What I have come to realize is that many of the things I have tried over the years have taught me something about my body as a system, and how it reacts favorably or unfavorably to what I put in it. I have started to find a group of health "gurus" that I can learn from and get ideas of what I might be able to do to tweak and improve my health and reach a better balance. I have come to a place where losing weight or fat is not the ultimate goal here. Rather it is a side benefit on the way to better health. Not losing is simply a symptom that something is not working in what I am doing right now, and I need to examine and adjust.

These are some of my favorite gurus:

Sean Croxton of Underground Wellness. His slogan is JERF; Just Eat Real Food. He is down to earth, and regularly interviews people who are smart, and pushing the field of wellness forward. I have found several other good people to follow through his podcasts.

Dave Asprey of Bulletproof Executive, Bulletproof Coffee and Bulletproof Diet. He is a little extreme in my book, but he is smart, and very research driven. He has taught me the value of clean food. And Bulletproof Coffee has done some amazing things for my health and well being. I have had to make tweaks to the formula to adapt for the fact that I can't do dairy anymore, and ghee does not froth, but it still delivers.

J.J. Virgin of The Virgin Diet. I am sorry, but I find the name Virgin Diet unfortunate. Actually kept me from investigating it for awhile. Turns out, it has had tremendous benefits for me. She has a strong background in nutritional and immune response, and how this affects our bodies balance. Through using her protocol I was able to identify several food groups that I need to avoid if I want to manage my autoimmune conditions, and be in better balance to lose weight.

Jimmy Moore, of Livin' La Vida Low Carb, and Keto Clarity, and Cholesterol Clarity. Jimmy is just a regular joe, who was severely overweight; more than 400 lbs. He lost 180 pounds, and started sharing his journey, and along the way he began a blog, and then a podcast to share what he learned with others. He connected with many experts in the field of nutrition and has learned and shared beyond what most people can or would do. He is down to earth, and crystal clear in the way he communicates concepts that are not too easy to grasp the first time (or first few times) around.

Gary Taubes. Gary is a science writer for the New York Times, Science magazine and has written several books. In addition to a degree in journalism, he has a degree in Physics. He is smart, and knows how to get into the weeds, and figure out what is going on. He has written Good Calories, Bad Calories, and Why We Get Fat, and What to Do About It. The second is more readable. Kind of a condensed version of the first. That book got me started on my low carb journey and made a dramatic turn in my health and well-being.

Dr. Lustig of the video Sugar: The Bitter Truth. One day I happened upon Dr. Lustig's video on YouTube, and sat and watched the whole hour plus. I was stunned when it was over. I knew sugar wasn't good for me. But I never realized in how many ways it was undermining any attempts I made to be healthy. That day I began my work to eliminate sugar in it's various forms from my life.

Do you have any "gurus" that have helped you on your journey?
