The craziest thing has happened, but at such an imperceptible speed I couldn't tell you exactly when it happened. I actually CRAVE veggies now. I get excited about having brussel sprouts for dinner. I had the most amazing roasted squash last night, and today's cabbage was comfort food at it's best! And kale! Yesterday I made the best kale with a bit of bacon for the fat. Everything tastes great when you can use a little bacon or butter to cook with. :-)

I think, if you have been eating too many sweets, and too much gluten for too many years, it takes a while for your body to adjust to this new (much healthier!) norm. I still enjoy something sweet from time to time, but usually it is a bit of a letdown. Nothing seems to taste as good as I think it might, so I seldom eat much of it. But, I am happy to pile the veggies on my plate. I can't tell you when this became the new normal for me, but I like it!

Most people think of a paleo diet as being meat centric. But the longer I spend eating a paleo-like diet the more I have come to see how much it is about eating food that is well sourced and loaded with nutrition. Industrial food won't do. It never, ever tastes as good or make me feel so great. A wide, colorful array of veggies is central to this way of eating. And yes, there is meat, and wonderful, healing, satisfying fats. But the veggies should get more press. They are how I think about what is in season...and keep my food budget in line! I have not been wanting a salad for the last two months. There are so many other things that are more seasonal, and appealing in these cold months. But in a few months, as the weather warms again, I am sure I will be looking at those greens and getting excited about making salads again.

One of the things I have added to my diet since the fall is bone broth. I make it myself, in a slow cooker for 18 to 24 hours, or in the pressure cooker for 2 hours. I save bones from cooking, and get some big dense ones from the farm we get our meat from. She gives them to me for free! It seems to be doing some amazing things to my skin, hair and nails. In particular, I was distressed out how much hair I seemed to be losing in the fall. I think I had gotten too low on carbs, and it pushed my thyroid function lower. I have Hashimoto's hypothryoiditis. My understanding is that this can happen with extremely low carb diets. I started making the bone broth, and having a cup most mornings after I have my coffee. I love the warmth, and the richness of the broth. But this week, I noticed that I had tons of new hair growing on my scalp. Amazing! The hair loss was beginning to freak me out a bit. My nails are growing like crazy, and I have been getting lots of compliments about my skin, completely out of the blue. This is good healing stuff.

I have added back some starchy veggies and a little fruit to bring my carbs up to a better level for my biology. Even had some lentils the ohter day! Still very low compared to a Standard American Diet (so SAD), but definitely up from before. I am enjoying a little more variety in my diet. I think all this good nourishing food is doing it's thing to heal my gut.

I haven't stepped on the scale in about 2 weeks. Don't care too much about the number right now. Clothes feel fine, and energy is better. Weight loss has shifted from my primary motivation to a sideline. I want to lose weight, but feel like it will happen more easily when the rest is more in balance. A better hormonal balance is what I want right now.

Weight is up, but considering that I have had sweets in my diet around the holiday, I am not doing too bad. I didn't go too far off the reservation, and found I really enjoyed my normal foods after straying from my usual fare. I also noticed how badly I felt from eating gluten and sugar. I avoided diary for the most part, and I have been able to reintroduce eggs in small quantities. I try to limit myself to pastured eggs when at all possible.

Started making bone broth regularly. It is so good in the morning after my coffee, with all this brutal cold weather. It warms me up from the inside! DH and I have been able to stay healthy for 2+ winters now since we started with the bulletproof coffee in the a.m. Feels like the bone broth is further insurance against getting sick! I hate getting sick! I just don't have the time....as if anyone does. ;-)

Glad to see others navigating their way back to eating well, and better self care.
