I had quite an experience yesterday. Made and gobbled up my first Muffin in a Cup. I got really nauseous within 30 minutes and stayed that way all day. Unable to eat anything and even drink the required water. Better this morning but being very careful. The culprit? I'm sure it's Coconut Flour. My digestive track does not like it. I've never had trouble with coconut oil or macaroons, etc. I realize I have occasional nausea that feels like excess butter. Researching it, I think I may need digestive enzymes. Usually I can eat anything. I'm really disappointed. I wanted to make the bread next. Anyone have experience with this?

Not specifically, but try almond flour instead.

Thank you. I will. But, coconut flour tends to make things lighter. Oh well Onward and upward.

Just the opposie Jackie I'm allergic to the almond flour.

Coconut flour is really heavy and needs extra water to process and mix. You can also try to grind sesame seeds in a clean coffee grinder and mix into the almond flour for a richer mix and add powdered psyllium husk as well. All of this adds fibre so may cause digestive issues. Or try mixing with oats and make a flat oat pan fry bread. 🤷🏻‍♀️

I haven't gotten a chance to use my coconut flour yet. Seems like all the recipes I have made which are few (once I find one I like I wear it out) calls for almond flour so far. I haven't had any problems with it but I know some people it has caused issues with. I'm not just loving the almond flour texture and I can't wait to use the coconut.

Maybe try the ketoconnect.net bread recipe - they have you separate the eggs, whip the whites to lighten the texture. Takes longer than mug muffin but you get a loaf of bread you can slice and enjoy.

The High-Fiber 1-Minute Flax Muffin uses Milled Flaxseed. Can you eat that?

Debbie. Perhaps, but I can't find Challenges. I think I must have an old version of FS and have not gotten through to the company. I'll go on line.

Coc flour doesn't agree with me, either. I make the microwave muffin with 1 egg, 1/4 c flaxseed meal, 1/2 tsp baking powder, 1 teaspoon oil (coconut, melted butter, olive - whatever) and 1 tablespoon water. That much flax seems a little rough for my gut, so 1/2 muffin is enough for me and it's very filling anyway. If you want something bread-like, there is a recipe for "cloud bread" (not sure) that uses eggs and cream cheese to make an amazing "bread" that's like a Kaiser roll. I wouldn't have believed you could do this with those ingredients but it works and is good.

Thanks, Trackin64. I'm definitely going to make the cloud bread. I've got all the ingredients just have to make the time. Also, will check out the flaxseed muffin. I'm going to research to find something like it that I can eat. My elimination is still not back to normal. I'll be more careful when adding new things to my WOE. I can thank everyone enough for all the support. 💕

My husband doesn't like the Almond Flour recipes, so I use Coconut Flour in most of the ones I make.

I use flaxseed meal as a replacement for the almond or coconut flour. Since the fiber in flaxseed in insoluble, it does not have any impact on your net carb count

interesting, I made some pancakes with quinoa and coconut flour and was cramping the rest of the day. I wonder if it was the coconut flour?
