Hooray! Perfected Keto friendly Peanut Butter Chocolate Cookies recipe to go with my Bullet Proof Coffee, Gluten free, packed with Pea-nutty goodness and less than 5 net carbs per cookie! Ingredients 1 1/2 Cup (325 g) extra Crunchy peanut butter -room temperature 1/4 (60 g)Cream Cheese - room temp 1/2 cup finely shredded coconut unsweetened 1/2 cup Erythritol or Xylitol or sweetener of choice 2 large eggs 1 tsp Pure Vanilla Extract 1 tsp Baking Powder 70-80 Sugar Free Dark Chocolate Chips(optional) Preheat oven to 325° degrees Sift together coconut, sweetener, and baking powder and set aside. Cream Peanut butter and Cream cheese with mixer until smooth and uniform. Whisk in eggs and vanilla until smooth. Fold in dry ingredients Line a cookie sheet with parchment paper or oil lightly. Wet hands and Roll into heaped tablespoon sized balls. Press flat with fork, then turn fork 90° and press again into tray to create classic ridges. These cookies will rise but will only spread slightly. be sure to shape them into your desired size before baking. If using, Top with Chocolate chips. Bake for 10-12 minutes or until tops and edges are just beginning to brown and edges are beginning to firm. Remove from oven when still soft, They will firm up fully when cooling, and can become very dry if overcooked. Nutritional info from Fat Secret app and is approximate.
