One keto pumpkin pie done and one ready to go into the oven! I confess to sampling a little bit of the filling before it went in and it was great!

I really had to do some experimentation to get these pies done. The filling was a real guess with Erythritol instead of brown sugar and sour cream instead of sweetened condensed milk. I made too much filling so I had to do two pies. But I only had enough almond flour and liquid coconut oil for one pie! The second one was done with coconut flour and butter-flavored olive oil. Interestingly, it was MUCH harder to make the dough based on the same recipe so I had to add a lot more water. I eventually got it to the consistency I wanted so let's see how it comes out!

Happy Thanksgiving, friends! I still need to work up all the macro calculations but I had a tiny sample of each last night before refrigeration and I have to say there may be a bit of work to do. The crust was not as crispy as I would like. But I'll fill you in after trying full pieces later! Have a warm and wonderful day!

The macros on these pies are as follows: cals: 330 | fat: 29.3g | carbs: 11.2 | prot: 7.1g. That includes the crust and filling. So I think these qualify as keto level so long as you only have one slice! I ate two (one each) on Thanksgiving. The calories are for one sixth of the pie, so it you cut it into eight pieces, the calories and macros are even better. I will get the recipe up on DietTruth soon.
