This is ice cream making day.. Buttermilk vanilla with lemon zest and bourbon,- fresh strawberry, and pineapple coconut .. there will be six of us. Each quart serves six easily. There will be some leftovers but they will keep till another day. I have three machines so as soon as one starts churning I put the finishing touches on the next and then the next. Did as much prep work as possible yesterday. Half of the sugar in each recipe was replaced with SWERVE. My group of people know me well and thus no second helpings.

And yes, dinner will be black bean burgers.



Update: the black bean burgers were a HUGE hit. All three ice creams came in with rave reviews as well. Everyone had eaten the ice creams before and everyone had a favorite, but everyone also had a small portion of each flavor.

I prefer home made to store bought. Don’t get me wrong, I eat Haagan Daz once in a while but I love the creative process of making my own. I have a French vanilla and lavender recipe that is not only delicious but very pretty with its light lavender color.

Have you ever made fruit sorbets in that? I've developed a dairy intolerance in the last couple of years, so ice cream is a no for me. BUT I have always loved mango and lemon sorbets. Usually that just entails a pint of Haagen Dazs, but it would be fun to buy a maker and go homemade.

They all sound delicious. I enjoy making it too, but I especially like making it when I can share it. I made pistachio and almond for Easter. I am going to try making that vanilla lavendar ice cream. Do you use your own lavendar?

Lots of fruit sorbets and gelatos, popsicles and of course, ice cream on the internet. Just Google what you are interested in and you will get lots of suggestions. This recipe is from Joy the Baker———Buttermilk Ice cream 1 3/4 cups heavy whip cream 1/2 cup sugar. I use half SWERVE and half sugar 3 tablespoons honey Warm in a pan until sugar and honey are melted. I do this at night and refrigerate overnight so solution is cold. 1 1/4 cups buttermilk 1 tablespoon bourbon I add a squeeze of Myer lemon and a little zest. Just personal preference, not part of the original recipe. Combine bourbon and buttermilk —- add to cream mixture, stir well, and pour into ice cream maker. If you don’t have one use a Rubbermaid type container. Freeze for at least six hours. The alcohol keeps the ice cream from freezing into a solid ice cube. I have never made it without an ice cream maker so I don’t know what the texture would be like. If I were to try that I think I might give a couple of whirls in the blender first.

I also have made dozens of different flavors of fruit popsicles. My young runner friend really loves them. They are a perfect snack for anyone. Portion controlled and delicious. And something along the healthier side to keep in the freezer for your kids this summer. Her favorite is cucumber kiwi and her best friends current favorite is strawberry mango. I have a couple dozen types of molds but most hold no for than 2 oz. pretty good damage control. I have a fudgescicle one that rivals the real thing..
