Has never tried cooking sweet potatoes before but oh my they are good! First, tossed them with olive oil, black pepper, cayenne pepper, and cinnamon (!), then roasted them at 400 Fahrenheit for 40 minutes. It tastes so delicious! I'm in love.

Sweetpotato as a jacket potato is my fave (prick with a knife... stick in microwave for 5 minutes at a time... keep checking, until it's slightly soft... then put in oven for approx 20 minutes) - just slicing it open and whacking a whole load of butter on it! Mmmmm.

I suggest weighing what you are eating in grams. Sweet potatoes are very dense. 27 grams is a hair under 1 ounce. Using cup measurements makes it hard to be consistent or accurate.. If you are not used to metric, it takes a little mental adjustment. 28 gm. = 1 ounce. You can round up to 30 if it makes it easier for you. Give it a try.

Kenna, I agree. I never measure in cups. I found carb stats in Internet to share

I bake them for a bit, and then toss them in a bit of coconut oil. Salt and pepper and they're perfect.
