I have sore muscles today. Not because I joined a gym, but because I went grocery shopping! Holy cow, I'm out of shape. The shopping cart (or buggy, as we say in the South) had a mind of its own. It pulled to the left, and occasionally would make an abrupt left turn. I fought that sucker through the whole of Walmart. The fuller it got, the harder it got to push and steer. At some points, I had to throw my whole weight against it to get it to go where I wanted. I've been trying to simplify food preparation, so I picked up some frozen burger patties. Last night I made a (bunless) mushroom Swiss burger, and it came out really good! That, with a small avocado, was my one meal for the day, and very satisfying. The last couple of days I've been wavering about this journey. Diet fatigue is part of it, but the main thing is I'm not really happy with how I look. Even though I know I've dropped almost 7 inches in all the major measurements, I don't really feel like I look very different in the mirror. The major exception being baggy, saggy skin everywhere! Belly flap, upper arm wings, even on my forearms. I'd almost prefer to see plumply filled out flesh to the wrinkly sags. *sigh* I know...that skin was stretched out for a LOT of years, and at my age, the chances of it firming up are slim. But I remind myself of the health benefits of this WOE, above and beyond the weight loss, so I soldier on. I've been invited to my neighbors' for Thanksgiving, and will be making cornbread dressing and deviled eggs. I spent some time yesterday looking up Southern recipes for the dressing, and there are some really odd variations! My family traditions are from the Mid-west, so the recipes I grew up with are way different that what I found. They add, for the most part, cream of chicken and cream of celery soups to the mix, as well as eggs. I'm going to give it a try, since I'm the only 'Yankee' that will be there, and I want the rest of the folks to find it familiar. And since the dressing recipes were so different, I thought I'd better look up 'Southern' deviled eggs. Thankfully, there's not a lot of variation there. But I did find a great tip to make sure the hole of the yolk is centered. The day before you cook the eggs, turn them upside down in the carton. If they have been sitting in the carton for a while in one direction, the yolk will have settled at the bottom. Turning them will make it migrate to the middle.
