Warm Spinach & Pepper Salad

A delightful low carb salad with a beautiful blend of spinach, bell peppers and feta

Ingredients

Directions

  1. Heat oil in a large skillet over medium-high heat.
  2. Add peppers and sauté for 1 minute, turn heat down to medium and continue sautéing for 3 minutes.
  3. Add garlic and lemon juice sauté for 30 seconds to 1 minute.
  4. Add spinach. Sauté until all the spinach has wilted.
  5. Off heat and stir in feta. Serve immediately.

This recipe is amazingly tasty, quick to make and clean up from. My husband also loves this recipe and so do my kids.

Reduced or fat-free feta works well in this recipe.

Loved it! I didn't have any feta on hand so I used pepperjack. So good! Will be making again this week. Not only is it tasty but super quick to make. Great for non-cooking people like me.
