Sweet Potato Chilli
Sweet potato, carrots, peppers and protein packed beans in tomato sauce.
1/2 cup fire roasted crushed tomatoes
1 1/2 cups chunky tomato sauce
1 cup dark red kidney beans
4 cups vegetable broth
6 tsps garlic
4 tbsps chili powder
1 tbsp cumin
2 tsps ground oregano
1 tbsp olive oil
2 medium carrot
1 oz onion
1 5" long sweet potato
1 small red pepper
12 oz kidney beans
Clean and chop all vegetables into bite size pieces or smaller.
Add oil to pan and bring to a medium-high heat. Saute all vegetables starting with the sweet potatoes, carrots, onions and garlic for 7 minutes. Add peppers and cook an additional 7-10 minutes.
Add the tomatoes and the rest of the seasonings. Simmer for 5 minutes.
Add vegetable broth and kidney beans and bring to a boil, allow to simmer for 20 minutes.
Serve adding salt and pepper to taste.
